With a strong and refined taste, exceptional when eaten raw, it is better not to accompany it with extremely elaborated dishes. The white truffle is by far the most precious and sought after for its undisputed quality all over the world.
A source of pride for Italy, where it is known as “white of Alba”; it is present in many Italian regions, in particular in Emilia Romagna, Piemonte, Marche and Molise, Toscana, Umbria and Abruzzo.
Ocher yellow or olive yellow in color, it has a smooth peridium and a greyish white gleba in the more mature specimens.
